These are the ONLY nachos I currently make for myself: chili con carne nachos! Although chili con carne originates from Tex-Mex cuisine, these nachos are often served in northern Mexico.

Ingredients for the chili con carne:
- 6 or 7 guajillo chilies
- 2 diced tomatoes
- 1 can of beans
- 1 onion
- 2 cloves of garlic
- 250 g diced bacon
- 500 g minced meat
- 2 bay leaves
- 1 tsp cumin
- 2 cloves
- Salt
- Pepper
- Jalapeño chilies (optional)
Ingredients for the nachos:
- 10 corn flour tortillas
- frying oil
Ingredients for the cheese sauce
- 300 ml milk
- 300 g Cheddar cheese
- 10 g cornstarch
- Half a teaspoon of cayenne pepper (optional)
