- 1.5 to 2 kg pork from the rump or shoulder
- Lard as desired - ideally: 1 kg lard per kg meat.
- 4 to 6 garlic cloves
- 6 to 8 allspice berries
- 4 bay leaves
- 1 large onion
- Rosemary and thyme sprigs
- 1 cinnamon stick (or 1 teaspoon cinnamon powder)
- 1 beer
- 2 oranges
- 1 glass of evaporated milk
- Small handful of cilantro
- 1 red onion
- Limes
- A little water
- Corn tortillas
- Salt
