Ingredients for 6 to 8 servings:
-For the best summer salad of your life: Salpicon
3 ripe tomatoes
Red onion
6 to 8 radishes
1 head of Roma lettuce
Small handful of coriander
Diced brine cheese (e.g. feta, but better panela!)
Chili to taste (optional)
Vinaigrette
Tostadas
Salt and pepper to taste
-For the broth
1 kg meat (fibrous soup meat or flank steak, boiled beef, false fillet)
- 3 cloves
3 cloves of garlic
8 allspice berries
2 to 3 bay leaves
A few sprigs of thyme
Half a white onion
2 tsp salt
-Vinaigrette:
Juice of one lime
8 tbsp olive oil
6 tbsp of the filtered cooking broth
3 tbsp apple cider vinegar
tsp oregano
Salt and pepper to taste
