Empanadas (pastries) are like few other dishes found in almost all culinary cultures. In this video, I'll show you many tips for making all types of pastries perfectly. I'll use one of my favorite Latin American recipes as an example: Empanadas Criollas.
Ingredients for the filling (24 empanadas / filled pastries):
- 500 grams of ground beef
- 500 grams of white onions
- 1 red pepper
- 50 grams of beef lard (alternatively clarified butter)
- 1 tsp oregano
- 1/2 tsp cumin
- 1/2 tsp chili powder (of course you can use much more)
- 1 tbsp sweet paprika powder
- 10 g salt
- Handful of halved olives
- Handful of raisins
- 4 eggs cut into sixths
Ingredients for the dough (24 empanadas / filled pockets)
- 500 grams of wheat flour
- 80 grams of beef lard (alternatively butter)
- 220 grams of hot water
- 1 tsp salt
