There's one corn recipe I absolutely love: esquites! This corn wonder is an essential part of Mexican street food culture. The dish also makes a great side dish and is very quick to prepare. It doesn't get any better than this.

Ingredients for 6 people
- 8 cobs of sweet corn
- 1 onion
- 2 cloves of garlic
- 2 or 3 deseeded jalapeño chilies
- Handful of fresh epazote (or 2-3 pinches of dried epazote)
- Lime wedges for serving
- 80g butter
- Mayonnaise to taste
- Chili powder to taste
- Salt
