Hardly any homemade soup recipe is as ingenious and as simple as this South American or Ecuadorian barley soup with pork ribs.

Ingredients for 4 to 5 servings:

400 g to 600 g pork ribs

120 g barley rice

4 spring onions

2 to 3 cloves of garlic

2 stalks of celery

1/2 tsp cumin

tsp oregano

2 to 3 diced potatoes

1 to 2 diced carrots

About 70 g white cabbage

1.8 L water

Parsley to taste

Coriander to taste

Salt and pepper to taste

2 to 3 tablespoons of annatto oil (video on how to make it yourself in the credits or in the description above)
