Ingredients for the dough (15 large or 24 small empanada dough blanks):

500 g flour (type 405)

80 g butter

tsp salt

220 ml HOT water!

Ingredients for the cheese filling

100 g diced shallots

2 tbsp butter

400 g cheese (I used 200 g feta and 200 g Gouda)

1 shot of white wine

Ingredients for the spinach and salmon filling

250 g smoked salmon

250 g fresh leaf spinach (125 g for frozen)

1 diced onion

200 g ricotta

2 tbsp butter

Handful of finely chopped fresh dill

Salt

pepper

Pinch of nutmeg
